Blast Chillers and FreezersCooling foods in the open, or placing them hot into a standard refrigerator is no longer acceptable, and to prevent the growth of bacteria, hot food should be quickly chilled using a Blast Chiller. If food is to be frozen, the faster the freezing process happens, the smaller the size of ice crystals formed in the food, and therefore the better quality when defrosted. A Blast Freezer achieves this. By using a combined Blast Chiller / Freezer, you will get maximum versatility and use. These cabinets can chill the stated weights of food from +90C to +3C in 90 minutes, and from +90C to -18C in 240 minutes.
